Winemaking We strive to produce wines that express the individuality of the land and show nature’s touch. After selecting the best grapes, fermentation lasts eight days, allowing time for complexity, color and texture from the skins to fully integrate into the wine. Once balance is achieved, we age the wine for six months in French oak barrels. Bottling is the final step when the cork becomes the guardian of a wine laboriously crafted to be as close to perfect as possible.
Vintage Our Pinot Noir comes from the foothills of the Andes Mountains—from our Pangal vineyards. These vines are about 15 years old and rooted in a mix of stone, clay and sand soils. With wet weather behind us and summer on the horizon, bud break was right on schedule for the 2021 vintage. Vines sprung to life to find cooler temperatures and abundant water reserves thanks to winter’s snow. Summer stayed chilly, allowing grapes to ripen slowly, resulting in delightful red fruit flavor and superb balance.
Pairing Logic This Pinot is light and lively. Its colorful fruit flavors and refreshing acidity will shine next to dishes will high salt and fat content, herbal seasonings, rich sauces, or fruity marinades. Grilled chicken and turkey make excellent protein selections, especially greasy drumsticks and thighs. Generously salted roasted root vegetables will play into the wine’s earthy, graphite characteristics while highlighting its ripe fruit flavors. Top your dish with a creamy sauce or play further into fruit with berry-based marinades.
