This ever-changing blend features Pinot Gris, Sangiovese, and Pecorino—though past iterations have included up to 21 varieties—all sourced from their biodynamically farmed vineyards across five sites. The winemaking for Gentle Folk Rainbow Juice combines multiple techniques: some grapes undergo skin contact, others are direct-pressed, and some contribute free-run juice, with fermentation occurring naturally without additions. Previously marine scientists specializing in seaweed, the Beltons bring scientific precision to their minimal-intervention philosophy, producing wines that capture the terroir of the Adelaide Hills.
